2012 hopefully I will have the world by the tail!

This is a new year so I am of course in a new state of mind.  I actually was wondering today if I have ever started the year with such determination for change.  I am positive I am going to get my body back and be more centered in my life.  I want to be who I tell myself I am meant to be.  I don’t want to be the person who runs on the last fumes of energy and feels stressed. 

I am eating all vegan plant-based food.  I haven’t cheated.  I started January 1st with the 21 day vegan kickstart that I posted.  I haven’t exactly followed the meal plan because I do think for me it would be going backwards with so much processed food.  I have shared it with others who are following the meal plan and love it.  I think it is probably a good fit for anyone new to trying vegan. 

I am showing up for spin class even with it meaning that I have to be there 30 minutes early just to get a bike for the class.  The crazy thing is people go in mark a bike with a towel 30 or more minutes before the class even starts at 6 am.  I am determined this next week to add in some free weights.  I won’t promise the weights will be 3 times a week but I am adding them.

Then my pretend sister-in-law ( meaning if I were married that is who she would be) I don’t really hang out with her or talk to her enough to put her in a friend category but she is more that an acquaintance.  Any who she gave me the book The Happiness project.  You read a chapter each month with various tasks.  This month exercise more, so I have that one covered.  The next tasks get more sleep, so I am going for starting that Monday.  She says it takes 2 weeks for the extra sleep to kick in so I am willing to try it.  The 3rd task organize your home so we started today.  Kent and I worked on the garage.  I am sure the garage is not the first place any rational person would start but I am not rational.  I, for some reason was bugged by the fact that I have had 3 pretty big boxes out there untouched for almost 5 years.  Mainly old nursing stuff which as rapid as medicine changes I am sure it was out of date and of no use.  The rest of the stuff from my marriage so I figured after 5 years since that is long ago history, no need to keep that stuff. 

I do actually feel better with each change.  The funny thing is most of the months so-called changes use to be my usual life so maybe I am getting it back???

USDA approves more GMO corn

USDA Quietly Approves New GMO Corn, While Touting Safety of Agent Orange Ingredient

Over the holidays, the USDA approved a strain of Monsanto’s genetically engineered corn that can now be planted freely in the environment and distributed throughout the U.S. food supply, with no oversight or efforts to track its safety.

Monsanto says the strain is drought-tolerant, but the USDA itself has actually found otherwise.

Instead, the agency ignored its own results as well as concerns from the public, which has little trust in the safety of the crop. Nearly 45,000 public comments were written in opposition to the particular corn variety and only 23 comments were written in favor, according to the Cornucopia Institute.

Other GMO crops are also on the way. Cornucopia reports that the USDA has opened a public comment period for a soybean variety from Monsanto containing increased levels of an omega-3 fatty acid—which you hear a lot about as being healthy, but it doesn’t not naturally occur in soybeans.

The agency is also holding a public comment period for a GMO corn from Dow engineered to better resist the poisonous herbicide 2,4-D.

Cornucopia explains more:

While the USDA attempts to assure the public that 2,4-D is safe, scientists have raised serious concerns about the safety of this herbicide, which was used as a key ingredient in “Agent Orange,” used to defoliate forests and croplands in the Vietnam War.
2,4-D is a chlorophenoxy herbicide, and scientists around the world have reported increased cancer risks in association with its use, especially for soft tissue sarcoma and malignant lymphoma. Four separate studies in the United States reported an association with chlorophenoxy herbicide use and non-Hodgkin lymphoma.

Mark Kastel from Cornucopia said, “the approval of a cultivar resistant to 2,4-D will cause an exponential increase in the use of this toxic agrichemical,” comparing it to Monsanto’s GMO corn that has become resistant to itsRoundup herbicide—and which has led to the evolution of superweeds that grow up to three inches per day.

Bad News for Public Health and Safety
The science of the effects of this chemcial is frightening:

Research by the EPA found that babies born in counties with high rates of 2,4-D application to farm fields were significantly more likely to be born with birth defects of the respiratory and circulatory systems, as well as defects of the musculoskeletal system like clubfoot, fused digits and extra digits. These birth defects were 60% to 90% more likely in counties with higher 2,4-D application rates.

Birth defects were also found to be more likely in babies conceived in the spring—when application of herbicides is at its highest.

There’s also a touch of irony that should not be overlooked, again from Cornucopia:

In its petition, Dow AgroSciences states that 2,4-D is increasingly important for chemical farmers because of the presence of weeds that have developed resistance to glyphosate, as a result of the widespread use of Monsanto’s genetically engineered glyphosate-resistant crops.

When Monsanto introduced glyphosate, it was touted as a safer and less toxic alternative to herbicides like 2,4-D. Now, an emerging body of scientific literature is raising serious concerns about the safety of glyphosate as well.

 

21 day kickstart

I started the 21 day vegan kickstart.  I thought  it started yesterday but it is actually today.  I am a day ahead of myself.  I will try to follow it for the most part.  I actually eat healthier than the meal plan.  I was surprised there is so much processed food on it.  I guess it is a good place to start if you are wanting to clean up your diet?

I read tons of books.  I read all the ones that say no meat, dairy, pasta, processed foods and oil of any kind.  I always look at the recipe section and a lot of the stuff has meat, oil and pasta.  I never quite get why they do that.  I don’t know if most people never read the book and skip to the food section?  Maybe the average consumer bases a purchase on what the recipe section sounds like?  Who knows? 

Well, wish me luck on sticking to vegan.  I honestly feel better when I follow this path for many reasons.  We will see!

Dr. Joel Fuhrman recipe

I tried this recipe yesterday from Eat For Health.  We loved it and I hope you try it.  The book has good menu and recipe suggestions.

WEST AFRICAN LENTIL OKRA STEW

2 cups red lentils ( in a large saucepan, simmer red lentils in 3 cups of water for 15 minutes)

In a mixing bowl whisk the following:

2 tablespoons tomato paste

1/2 cup  smooth natural no-salt peanut butter at room temperature

4 tablespoons Dr. Fuhrman’s vegizest

4 cups carrot juice

 

Once that is mixed add to the simmering lentils.

Next add the following:

16ounces  frozen okra

16 ounces frozen kale or collard greens

2 cups frozen chopped onion

1 15 ounce can whole no-salt crushed tomatoes

1 medium sweet potato

4 cloves of garlic pressed

3 teaspoons chili powder

pinch of cayenne pepper

Bring everything to a boil.  Reduce heat, cover and simmer for about 20 minutes.  Uncover and simmer another 20 minutes

Yummy!

Confessions of a fluffy marshmallow

Ho Ho Ho Christmas is officially over!   I for one am glad.  I enjoy the time with everyone but I am so burned out on the gift giving.  I feel like it is so out of control.  Everyone (at least any average income person) feels stressed about the gifts.  I try my hardest not to give into the uncontrolled need to spend money I don’t really have.  The crazy thing is the last 48 hours prior to Christmas, some sickness to buy more stuff takes over.  You are all of a sudden filled with guilt that your gift might not be satisfactory. 

I have come to the conclusion this year that the pressure to perform with gifts, driving to everyone’s house, and last but not least making every food concoction that has a minimum of  1 cup sugar listed as an ingredient.  We all then in a state of bliss never stop eating everything in front of us.  I am not sure if it is because I don’t normally purchase that stuff or if sugar is secretly crack.  I then feel like a fat plump marshmallow. 

I am now of course on a quest to clean out my body and mind.  I am sure, sadly, I will go thru some type of sugary crack detox as I clean up my body.  I need a swift kick in the ass so that I don’t ingest the crazy foods we call a celebration.  They are all bad for you.  I have one client who swears that she had her entire family became vegan 2 years ago.  They do all vegan foods for Christmas and any holiday.  I need to either convert everyone I know or maybe ask to go to her family’s house to avoid this fat feeling I have today. 

Well I hope everyone was better or had more willpower than I did!!

Good blog and plus post makes you think about our food

 Big Food's 12 Days of Christmas

As the holidays rapidly approach, like many others, I find myself looking back over the past year. While on the personal front this past year has been amazing, there hasn’t been much to celebrate in the world of food. But rather than create yet another top ten list, I’ve opted for a holiday-themed option I’m calling Big Food’s Twelve Days of Christmas. To help explain the meaning behind the lyrics, here’s a quick primer:

12 Lobbyists lobbying: I never realized how “evil” the food lobby could be until a couple years ago when I watched this 60 Minutes episode called “Meet Dr. Evil.” This year we saw the food lobby in action on many fronts, but one of their ugliest fights was aimed at killing voluntary guidelines for kid advertising. As Reuters reported, “The loss of ads have worried companies such as Coca-Cola Co, which has spent $4.74 million to lobby so far this year, Kraft Food Inc, which has spent $2.09 million; and PepsiCo Inc, which has spent $2.61 million, among others.” Big Food has won the first several rounds of this fight, but I continue to ask the simple question:  Why do food companies’ right to market unhealthy products to children trump our right to raise healthy kids who aren’t exposed to junk food marketing? It seems like profits are prioritized over our kids, doesn’t it? 11 Admen a-lying: Do you believe everything you hear? I hope not! And that’s especially true when you listen to food advertising. Check out several of the ad efforts I’ve critiqued where junk food is equated with happiness, McDonald’s bastardizes the Olympics, and Truvia claims it’s “Honestly Sweet.”

10 Lawmakers ag-gagging: Big Food doesn’t like it when the truth is exposed. So what does it do? It tries to make it illegal for whistleblowers to catch them in the act. Thankfully these attempts failed, but to learn more about what Big Food tried to do, check out Mark Bittman’s article in the New York Times entitled, “Who Protects the Animals?”

9 Geneticists altering: If you live in the United States, did you know your processed food is full of genetically modified ingredients? It’s one of the many labeling secrets Big Food has been able to accomplish despite the questions over the safety of GMOs and the fact that many foreign countries require GMO labeling. But Big Food is never satisfied with the status quo, and 2011 brought GMO alfalfa into the United States’ food supply. Sounds like US consumers are “winning” just about as much as Charlie Sheen.

8  Chicken farms abusing: After recalling more than 500 million eggs last year due to salmonella, the egg industry took several more hits in 2011, including an accusation that one of the biggest, US egg producers (Sparboe Farms) has been cruel to its chickens. The situation was so bad that even McDonald’s dumped the supplier of its Egg McMuffin eggs. But tell me…if the food we eat is so safe and raised so humanely, why do we see these problems come up year after year? Why should we trust Big Food?

7 Cereals sugar-bombing: After working in the cereal business I knew that many cereals were little-more than sugar-laden bowls of dessert in disguise. In my blog I compared Frosted Flakes to Skinny Cow ice cream sandwiches. The Environmental Working Group also took the cereal industry to task, and made some revealing comparisons to snack cakes and cookies.

6 Scientists flavoring: After revealing my bout with soda addiction, I shared how Big Food and Beverage companies work with flavor companies to make our food addictive. If you haven’t seen the 60 minutes interview with Givaudan’s flavor scientists, you must check it out here.

5 Happy Meals: McDonald’s announced a healthier Happy Meal that now automatically includes a smaller portion of fries and a serving of apples. While McDonald’s move is certainly an improvement, it hardly equates to a healthy meal. As noted obesity expert Yoni Freedhoff points out, “We’re not going to “solve” childhood obesity with healthier Happy Meals. Giving parents more reason to go may well backfire.  We need to cook.”

4. “Fruit” Snacks: After reporting on the deceptive practices of fruit snack manufacturers in “Fruit Snacks … Real Fruit or Just Candy in Disguise?” back in July 2011, it was interesting to learn about a class action complaint filed against General Mills in October for deceptive advertising. Undeterred, General Mills defended its lineup of sugary snacks and said, “We stand behind our products and we stand behind the accuracy of the labeling of those products.” Once again Big Food confirms that it’s more interested in selling food than accurately portraying its products.

3 Recalled Burgers: The ongoing saga of ground beef recalls continued in 2011 with 60,000 pounds recalled in August, 131,000 pounds in September, and another 40,000 pounds recalled last week, just to name a few. Rather than address the underlying issues exacerbated by industrial farming, Big Food continues to play Russian roulette with consumers’ lives in the name of profits.

2 Tainted Turkeys: Unfortunately this recall was much more than two tainted turkeys. In August, Cargill announced the recall of almost 36 million pounds of ground turkey contaminated with a multi-drug-resistant strain of salmonella. Again I ask, if our food is so safe, why are we consistently having such huge recalls? Not only are these extremely dangerous to public health, but they are also an incredible waste of natural resources.

And a pizza as a vegetable: If there ever was a clearer sign that Big Food controls Congress, it’s got to be the battle over pizza in school lunches. As Michele Simon points out in her assessment of this latest installment of food politics, “the critical (and most under-reported) part of this story is how Congress has hijacked the USDA regulatory process to do the food industry’s bidding.” Thanks to food industry-funded lobbyist groups like the American Frozen Food Institute and The Coalition for Sustainable Meal Programs, our children’s health has fallen victim (once again) to corporate profits.

Something for the New Year

Vegan Hot Artichoke Dip

1 8-oz. package Tofutti Better Than Cream Cheese
1 14-oz. can artichoke hearts, drained and chopped
1/2 cup vegan mayonnaise
1/2 cup vegan Parmesan cheese
1 garlic clove, minced

• Mix all ingredients with an electric mixer on medium speed until well blended. Spread onto the bottom of a 9-inch pie plate or desired baking dish.
• Bake in a preheated oven at 350°F for 20 to 25 minutes or until very lightly browned.
• Serve on crestini or bagel chips.

Makes 2 1/2 cups

Is Christmas over yet?

Okay I have been a major slacker.  I am way past day 60 and I kind of feel a little like a failure.  I lost 12 lbs total which I suppose is okay.  I kind of feel like I should be doing better.  I guess it just means I am normal.  I am still on a quest to get my previous BUTT back! 

I joined a totally different gym with a co-worker.  She is, so far, meeting me at spin class.  I am driving a little farther to go to the gym that I would like, but it is great to have the accountability factor. 

I was just given a late birthday gift.  A book called The Happiness Project.  I guess we start it in January and each month work on the issues listed for the month.  You are accountable to a friend or who ever else is doing it with you.  January for example lists things like Go to sleep earlier, Exercise better, toss stuff,  reorganize, and tackle a nagging task.  I think it will be fun and again I will have the accountability factor. 

I think when it comes down to it we are all way too busy.  We need to slow down and find ourselves.  I sometimes think the reason our bodies, minds, energy levels, and everything else gets out of shape is because we spend all day focusing on everyone but ourselves.

Christmas Eve and Christmas Day I am going to try serving a few unusual dishes.  The funny thing is all are vegetable or nut based.  I suppose they shouldn’t be considered unusual but in our modern processed fast world plant-based food is now odd to everyone.  Kind of funny!! I am on a quest to change my little corner of the worlds mind and health.
